They were a family of farmers with roots in Napa Valley dating back. Chuck Wagner continues to make two world-renowned Cabernet Sauvignons – Caymus Napa Valley and Caymus Special Selection. Five Caymus/Wagner Family wines are served including the Caymus Special Selection Cabernet. Chuck Wagner and his late parents, Lorna and Charlie, started Caymus Vineyards in 1972. Made from grapes farmed in 8 of Napa Valley’s 16 appellations, the wine has a signature style that is dark in color, with rich fruit and ripe tannins – as approachable in youth as it is in maturity. Today, Caymus Cabernet is one of Napa Valley’s most celebrated wines. Working together for decades, Chuck Wagner and his parents established the family’s work ethic, appetite for innovation, down-to-earth sensibility, and deep appreciation of the pleasures of good food and wine enjoyed with family and friends. Tannins are fleshy and this charmer of a Zinfandel finishes long and lush. The Wagner family were farmers with deep roots in the Napa Valley – in 1857, Chuck Wagner’s great-great grandfather captained a wagon train to California from Bible Grove, Missouri. From the Napa Valley wine region, Caymus 2017 Zinfandel is a dry, full-bodied with layers of ripe red berry, jammy fruit, dark plum, cedar spice and white pepper flavours on the palate.
In 1972, Chuck Wagner started Caymus Vineyards with his parents, Charlie and Lorna, with a humble plan and an uncharted future. Warm, earthy spices like cumin, coriander, and cinnamon also bring out its playful side, and that’s a recipe for a good time in our book. This 2020 Caymus Cabernet Sauvignon from Napa Valley has heavy fruit and decisive tannins, this charismatic Cab is a perfect match for sumptuous slow-braised beef accompanied by heaps of creamy mash, or something unctuous like a shoulder of lamb. While abundant in tannins it retains a softness that guarantees a silky mouthfeel and sultry finish. Straight out of the gates it delivers a hefty punch of fruit to the palate followed by tantalizing notes of anise, cocoa, cherry vanilla, tobacco, and a hint of pepper. In typical Caymus style, this Cabernet is deep mulberry in color with aromas of blackberry jam, cassis, currant, and cocoa. It is a combination of more than 30 single malts and grain whiskies, b lended in Black Label style, but with a smokier twist. With bullish tenacity and a fearless approach to new viticulture practices, Caymus has churned out blockbuster Californian Cabs for over 40 years.
The new expression was created by Johnnie Walker master blender Jim Beveridge with the film’s director, Denis Villeneuve, with one eye on how Whiskies of the future might taste. The Wagners produced their first vintage in 1972, consisting of 240 cases of Cabernet Sauvignon.
